When it comes to feeling under the weather, there’s nothing that warms the heart and soul quite like a nourishing bowl of homemade chicken broth. This journey began for me when a dear friend in Australia introduced me to the comforting effects of chicken broth during her own bouts of illness. Whenever she felt rough, she would whip up a pot of this liquid gold. Inspired by her care and intuition, I found myself doing the same whenever I needed a little light in the dark.
Over the years, I experimented with the classic recipe, tweaking and adding various ingredients to suit my taste and maximize its health benefits. Now, what began as a simple broth has evolved into an ultimate anti-inflammatory collagen-producing elixir. I often crave this rich concoction after a long-haul flight: the goodness of the broth, filled with nutrients, works like a charm to ward off any impending colds.

Ingredients

Vegetables: 1 whole Celery, 6 carrots, 2 onions, 1 whole fennel, 1 whole leek, 5 garlic cloves (feel free to use as much as you like—the more, the better!)
Protein: Chicken legs (always with the bone for added flavour and nutrients)
Herbs: hand full of Coriander, parsley, thyme and sage
Optional add-ins: 1 x Fresh chilli for an extra kick
Spices: 3 large knobs of Ginger, 3 medium pieces turmeric (Make sure these are fresh), generous teaspoon of salt + pepper, 4-5 cloves


The Recipe
Follow this easy step-by-step guide to create your own nourishing broth at home.
Prepare Your Ingredients: Begin by washing and chopping your vegetables. Peel the garlic, and if you’re using fresh herbs, rinse them as well.
Brown the Chicken: In a large pot, heat a splash of oil over medium heat. Add the chicken legs to brown them for about 5-7 minutes, turning to brown on all sides.
Add the Vegetables: Toss in your chopped vegetables, garlic, and herbs. Stir everything around for a couple of minutes to bring out the flavors.
Spice it Up: add in your spices—ginger, turmeric, salt, pepper, and cloves—and mix well.
Add Water: Pour in enough water to cover the ingredients. Bring everything to a boil, then reduce to a simmer.
Cook Slowly: Let the broth simmer on low heat for at least 2-4 hours. The longer it cooks, the richer the flavour.
Strain and Serve: Once cooked, strain the broth into a large bowl or pot, discarding the solid bits. Enjoy it warm or store it for later use!
